Ingredients

2 servings
  1. 1 cupsushi rice
  2. 2 tbspsushi vinegar
  3. 1cucumber - cored and cut into thin strips
  4. 1canned tuna flakes in oil
  5. 1 tbspcreamy mayonnaise
  6. PinchSalt and pepper to taste
  7. Nori Sheets - as needed

Cooking Instructions

    Prep all ingredients:

    1. Wash cucumber, remove the core/seeds. Then cut into thin strips. Keep aside.

    2. Cook sushi rice until it's nice and fluffy. Add 2 tbsp of sushi vinegar. Mix well.

    Drain oil from the tuna can. Tranfer to a mixing bowl. Add a tbsp of mayonnaise, a pinch of salt and sprinkle some white pepper powder. Mix well. Keep aside.

    Place a piece of Nori sheet, rough side facing upward, on a sushi mat. Spread sufficient amount of sushi rice on top of Nori sheet. Use wet hand or plastic spatula to spread the rice evenly. Avoid covering the whole surface of Nori sheet with rice. Leave about an inch or more uncovered at one end. See pic below.

    Add cucumber strips. Spoon enough tuna in between the strips. Next, Place your thumbs underneath the bamboo mat and lift the edge that is closing to you up and over the filling. Curve and roll. Lightly moisten the end of nori sheet. This acts as a glue to seal the edge to the roll.

    If you happen to tear the sheet (Nori sheet by accident), just add an extra layer and roll the whole thing on a fresh Nori. Use water to moist the edge of the sheet so it sticks well.

    Next, cut the sushi rolls into bite size. Serve cold or at room temperature with some wasabi.
