  1. 1 poundground lamb
  2. 1 poundlean ground beef
  3. 4 cupsfreshly chopped mint
  4. 4 Tbspanko
  5. 4 Tbsunsalted butter
  6. 2 Tspflaked seasalt
  7. 2 Tspwhite pepper
  8. 4 cupstomato juice
  9. 4quartered potatoes
  10. 4quartered onions
  11. 4chopped celery stalks
  12. 4carrots, chunked
  13. 4 cloveshardneck garlic
  14. Equipment: baking dish, cast iron skillet
  15. Cost: lamb $4, beef $4, vegetables $4, tomato juice, other $3, per dinner $2.50

Cooking Instructions

    Bake chopped vegetables in tomato juice till soft, about 1 1/2 hours at 350F degrees.

    Mix meats with panko, spread on cutting board, cover with mint, roll tight, make 12 balls. Melt unsalted butter with salt and pepper.

    Braise meatballs till crusted, add to baked vegetables, serve.
