The mixture of ground lamb and ground beef with chopped fresh mint make a delicious tender lamb mint meat ball when pan fried in butter till brown, then added to oven baked vegetables in tomato juice for a full lamb stew dinner.
Cooking Instructions

Bake chopped vegetables in tomato juice till soft, about 1 1/2 hours at 350F degrees.

Mix meats with panko, spread on cutting board, cover with mint, roll tight, make 12 balls. Melt unsalted butter with salt and pepper.

Braise meatballs till crusted, add to baked vegetables, serve.

This old family recipe starts with: “ kill and pluck a large old hen”. It is probably the oldest recipe I have. My grandfather taught me to butcher chickens humanely, we hypnotize them first till they fall asleep and then butcher. This recipe is for a whole large chicken, seven pounds.
