My favourite homemade tomato and chorizo pasta

Cooking Instructions

Some ingredients.

One sauce pan for pasta. Cook per packet instructions. Don't forget to salt. Retain some pasta water for later.

One pan for frying chorizo. Chop or cube the chorizo. Fry in oil. Shouldn't take more than 4 mins. Keep the chorizo oil.

One pan for making the red sauce. Fry onions and garlic together first. 2-4 mins. Then chilli. Then add chopped tomato, and tomato puree.

Add fried chorizo to the tomato sauce.

Combine with pasta. Finish with some parmesan.

Pour some of the chorizo oil into the red sauce towards the end.

Pasta's great isn't it? It's fast, it's delicious, and it's the perfect meal to improvise whenever your original plan goes sideways. Like it did tonight, for me, when the mince I was defrosting for a pepper stuffing didn't thaw in time. Fortunately, there were mushrooms and a zucchini in the fridge, and all that was needed to transform them into a delicious dinner was a quick hop to the supermarket to pick up a little sausage and cream. In the end, despite being Plan B, the dish turned out wonderful. Meaty and rich from the sausage and mushrooms, with pops of juicy sweetness from the zucchini, and a splash of silky cream to bring it all together. It was pretty much perfect. Robert Gonzal -

This dish was another special request from my mother, who saw something similar being cooked on TV and asked if I could make it. She failed to record the program and didn't take any notes, though, so all she remembered was that the dish was vegetarian and had mushrooms, spinach, and sour cream. The fact that she knew so little was actually a positive, as I only had to meet a handful of requirements and could otherwise do what I wanted. So I swapped out the sour cream for creme fraiche, for extra richness. And I added shallots and garlic, because I love how they work in cream sauces. And I crisped up a few slices of prosciutto, which I served on the side to meet the vegetarian condition, but would otherwise crumble on top. In the end, the dish turned out great.
