My favourite homemade tomato and chorizo pasta

Ingredients

  1. The Sauce
  2. 3garlic cloves
  3. 1small brown onion, thinly sliced
  4. 1red chilli pepper, thinly sliced
  5. 1 tintomatoes (400g)
  6. 1 tbsp(heaped) tomato puree
  7. 1 tbspItalian herbs
  8. fresh cracked pepper
  9. flaked salt
  10. The Rest
  11. 2 linkscooking chorizo sausage (200g)
  12. 250 glinguine or spaghetti
  13. Olive oil, for frying

Cooking Instructions

    Some ingredients.

    One sauce pan for pasta. Cook per packet instructions. Don't forget to salt. Retain some pasta water for later.

    One pan for frying chorizo. Chop or cube the chorizo. Fry in oil. Shouldn't take more than 4 mins. Keep the chorizo oil.

    One pan for making the red sauce. Fry onions and garlic together first. 2-4 mins. Then chilli. Then add chopped tomato, and tomato puree.

    Add fried chorizo to the tomato sauce.

    Combine with pasta. Finish with some parmesan.

    Pour some of the chorizo oil into the red sauce towards the end.
