  8. 1 tspKasuri Methi
  9. Grind in Mortar and Pestle:
  10. 6 clovesGarlic
  11. 1 InchGinger
  12. 5Green Chillies
  13. For Making Bhurji:
  14. 200 gmsPaneer (Grated)
  15. 2 tbspMustard Oil
  16. 1 tbspRefined Oil
  17. 2 tbspGram Flour
  18. 1 tspCumin Seeds
  19. 1Onion (Finely Chopped)
  20. 1Tomato (Finely Chopped)
  21. Salt to Taste
  22. 2 cupsHot Water
  23. 1 tbspAmul Butter
  24. 2 tbspChopped Coriander Leaves

Cooking Instructions

    “Prepare the Curd Mixture:”
    • In a bowl, whisk the curd well. Add turmeric powder, Kashmiri chilli powder, coriander powder, cumin powder, pav bhaji masala, and kasuri methi. Mix well and set aside.

    “Grate the Paneer:”
    • Grate the paneer and set aside.

    “Assemble the required ingredients”.

    “Crush the Spices:”
    • Using a mortar and pestle, crush the garlic, ginger, and green chillies together. Set aside.
    • Finely chop the onion and tomato.

    “Cook the Bhurji:”
    • Heat mustard oil and refined oil in a kadai. Add gram flour and roast for 2 minutes.
    • Add cumin seeds and let them splutter.
    • Add the crushed garlic-ginger-green chilli paste and sauté for a minute.
    • Add the chopped onion and sauté for 2 minutes.

    Add the curd-spice mixture, mix well, and cook for 5 minutes.
    • Add the chopped tomato and salt, and cook for another 5 minutes.
    • Add hot water and let it boil for 2 minutes.
    • Add the grated paneer, mix gently, and cook for 5 minutes.
    • Add chopped coriander leaves and butter, cooking for a few seconds before switching off the flame.
