• In a bowl, whisk the curd well. Add turmeric powder, Kashmiri chilli powder, coriander powder, cumin powder, pav bhaji masala, and kasuri methi. Mix well and set aside. - 2

• Grate the paneer and set aside. - 3
“Assemble the required ingredients”.

“Crush the Spices:”
• Using a mortar and pestle, crush the garlic, ginger, and green chillies together. Set aside.
• Finely chop the onion and tomato. - 5
“Cook the Bhurji:”
• Heat mustard oil and refined oil in a kadai. Add gram flour and roast for 2 minutes.
• Add cumin seeds and let them splutter.
• Add the crushed garlic-ginger-green chilli paste and sauté for a minute.
• Add the chopped onion and sauté for 2 minutes. - 6

Add the curd-spice mixture, mix well, and cook for 5 minutes.
• Add the chopped tomato and salt, and cook for another 5 minutes.
• Add hot water and let it boil for 2 minutes.
• Add the grated paneer, mix gently, and cook for 5 minutes.
• Add chopped coriander leaves and butter, cooking for a few seconds before switching off the flame. - 8
