Ingredients

  1. 3 cupfresh Methi
  2. 1 cupfresh Matar
  3. 9-10Cashews
  4. 1medium + 1 small Onion
  5. 3green chilli,
  6. 1Bay Leaf
  7. 1 " Ginger,
  8. 3 Cardamom
  9. 1/2 tspCumin seeds
  10. 1" Cinnamon stick
  11. 3 Cloves
  12. 1/2 tspSugar
  13. 3 tbspGhee
  14. 3 tbspfresh Malai / Cream
  15. 1 tspCoriander powder
  16. 1/2 tspgaram masala powder
  17. 1/2 tspTurmeric powder
  18. 1 cup - 1.5 cup Milk
  19. Salt as required

    Assemble ingredients

    Finely chop Methi leaves. In pan add 1 tbsp ghee, fry / sauté chopped Methi by adding little salt and fry till water evaporates, it takes around 10 minutes.

    In pan add 1 tbsp ghee, add chopped onion + green chilli and sauté till pinkish or translucent, then add ginger + cashews and sauté for 3-4 minutes. Add 1/2 cup water and simmer / cook for 4 - 5 minutes and let it cool.

    Now grind it to a smooth paste by adding slight water.
    In pan add 1 tbsp ghee / oil, add all whole spices, let them crackle and then add the smooth paste + 4 tbsp water. Add coriander powder + salt and cook for 2-3 minutes.

    Sauté till water evaporates and masala turns fragrant.
    Now add boiled green peas + sautéd Methi, mix well. Add milk + turmeric powder and cook for 3-4 minutes under cover.

    Add garam masala + cream and mix well, also check for salt. Add sugar and Cook for 2-3 minutes, if gravy seems too thick then warm water can be added.

    Methi Matar Malai is ready to serve.

    Serve with Paratha or any Flat bread.
