Butter roasting, or poele in French, will transform any fish into wonderful French cuisine yet is surprisingly easy to make.
Cooking Instructions

Remove the skin of mahi mahi and cut into smaller pieces.

Put the mahi mahi in a bowl with garlic, salt and pepper and olive oil, and let marinate for at least 10 minutes.

Heat a little oil in a saucepan and fry the mahi mahi on both sides until golden. Remove onto a warmed dish.

Using the same pan, add the sake or wine, soy sauce, and butter and mix well over low heat. Pour the sauce over the mahi mahi and garnish with parsley.
