This is a sumptuous recipe using Rajgira & Singhara flour , both rich in fiber & gluten free. And potatoes give them the required softness . Singhara flour is rich in antioxidants , a good source of potassium, fiber rich ,gluten free which contributes to overall health.

Ingredients

Makes 4 Parathas
  1. 1/2 cupRajgira flour
  2. 1/4 cupSinghara flour
  3. 1 tbspboiled & grated potatoes
  4. 1/2 tspcumin seeds
  5. 1 tspchopped coriander
  6. 1 tspchopped green chillies
  7. 1 tspginger, grated (spicy variety)
  8. 1 tspfarali garam masala (recipe below)
  9. 1 tsplemon juice
  10. 1/2 tsppowdered sugar
  11. Sendha Namak to taste
  12. Farali garam masala : 1 tsp roasted cumin seeds
  13. 1/2 tspblack pepper powder
  14. 3/4 tspclove powder
  15. 1/2 tspcinnamon powder
  16. 1/4 tspcardamom powder
  17. Sweet curds to serve with

    Assemble all the ingredients.

    Combien Rajgira, ssinghara atta, grated potatoes, cumin seeds,chopped coriander, ginger, green chillies, farali garam masala, lemon juice, powder sugar, sendha nanak & make a soft dough without using any water. Do not rest the dough at all.

    Divide the dough into 4 portions. Take 1portion & roll into semi - thick paratha about 3 inch diameter, with the help of dry Rajgira flour.

    Heat a girdle, place the paratha on it. Roast the paratha on both the sides using ghee & till golden spots appear on it.

    Remove the paratha on a plate.Cook another paratha the same way. Serve these delicious parathas with sweet curds.

    Farali garam masala : Take all the ingredients in a mixer jar & blend to a fine powder. Store in an airtight container & use as required.
