German Cucumber Salad

A recipe from my mom who's from Stuttgart :) German cucumber salad marinates the cucumbers and other veggies in a vinegar-heavy dressing so it's rather tart and super refreshing in the summer. Also no oil so very healthy!

Ingredients

4 servings
  1. 1large cucumber or 2 small
  2. 1large tomato or a few cherry tomatoes
  3. 1green bell pepper
  4. 2sprigs fresh dill
  5. 6-9 Tbspapple cider vinegar, or white wine or rice vinegar
  6. 1 Tbspwhole grain or Dijon mustard
  7. 1 tspsugar
  8. to tasteSalt and pepper

    Slice cucumbers as thin as possible (a slicer/mandolin works great if you have one). Chop the dill and bell pepper. Cut tomato into wedges.

    Put all vegetables in a bowl and mix with mustard, vinegar, salt and pepper. The vinegar might seem too strong at first but it will get milder after marinating. Add sugar if you like to make it milder.

    Cover and let marinate in the fridge for 20-30 minutes. Taste and add more vinegar, salt, etc if needed. Great with sandwiches, bread, or a side dish with basically any meal.
