Preheat oven to 350°F

Lightly grease 9 inch pan

heat oil in a large skillet over medium heat

add onions and cook, stirring occasionally, until onions or soft

stir in spinach and mushrooms and continue cooking until excess moisture has evaporated

in a large bowl, combine eggs, cheese, & salt

add spinach mixture and stir to blend

scoop into prepared pie pan

bake 30 minutes until eggs have set

Bake an extra 5 min. With whites only

let cool for 10 minutes before serving
