Ingredients

  1. 1 tbspOlive oil
  2. 1 smallOnion, chopped
  3. 10 ozPackage frozen chopped spinach, thawed & drained
  4. 1/4 tspSalt
  5. 1 largeHandful chopped mushrooms
  6. 2 1/2 cupShredded cheese
  7. 6Eggs, beaten or
  8. 1 1/2 cupEgg whites

Cooking Instructions

    Preheat oven to 350°F

    Lightly grease 9 inch pan

  3. 3

    heat oil in a large skillet over medium heat

  4. 4

    add onions and cook, stirring occasionally, until onions or soft

  5. 5

    stir in spinach and mushrooms and continue cooking until excess moisture has evaporated

  6. 6

    in a large bowl, combine eggs, cheese, & salt

  7. 7

    add spinach mixture and stir to blend

  8. 8

    scoop into prepared pie pan

  9. 9

    bake 30 minutes until eggs have set

  10. 10

    Bake an extra 5 min. With whites only

  11. 11

    let cool for 10 minutes before serving
