Ingredients

  1. 6Russet Potatoes
  2. 6 slicebacon
  3. 1 cupShredded Cheddar cheese
  4. 1/4 cupUnsalted butter
  5. 1Salt~to taste
  6. 1pepper~to taste
  7. 1Sour cream(optional)
  8. 1Chives (optional)

Cooking Instructions

    preheat oven to 400°F

    Microwave bacon for about 6.15 minutes.

    clean and dry potatoes. Prick potatoes on all sides. Put on microwave safeplate and microwave for 10 min. Flip and microwave for an additional 10 minutes.

    Cut potatoes in quarters length~wise, let cool and then scoop out flesh leaving about 3/8 in shell. Reserve flesh for another use. Brush shells inside and out with melted butter. Sprinkle w/salt and pepper. Add crushed bacon and cheese evenly.

    Bake @ 400°F for about 5~10 minutes.

    (Optional) Top with chives and sour cream.
