Cooking Instructions

Prepare grill for indirect cooking over medium heat. Combine potatos, 1/2 tbsp of rub, 1 1/2 tbsp of oil, salt and pepper...toss to coat and set aside...

Combine 1 1/2 of the rub and remaing 1 tbsp oil in prep bowl, stir until blended. Trim excess fat from chicken,if necessary. Loosen skin from breast and thigh portions of chicken....Spread rub mixture evenly under skin of chicken. Sprinkle outside of chicken with remaining 1 tbsp rub....you can add more rub if desired.

Pour out about one-fourth of the ber from the can to provide space for drippings. I have a special beer can roaster pan. Place beer. And place chicken over can holder so the can is upright in the caviry of the chicken. Arrange potatoes around chicken

Grill, covered, 60 to 75 minutes or until internal temp. Of chicken reaches 165°F in thickest part. Carefully rotate pan once during grilling and stirring potatos occasionally. Remove chicken from can holder, serve with potatoes.

My hubby usually brings back few cans of beer from his office during chinese new year but we don't usually drink beer. So the beers are just sitting there in my kitchen cabinet. One day, someone posted in facebook that he roasted the chicken with beer. So I decided to try it out and wow... We LOVE it. The meat is super tender, juicy, the skin is crispy and the seasoning is just perfect. The roasted veggies are also very yummy. My youngest son even finished all the purple sweet potatoes (He dont usually like purple sweet potatoes). The kids love it, hubby loves it. This recipe will be used over and over again! In this recipe, I used tiger white beer (the one I had at home). Next time will probably use other type of beer. Not very sure whether the different type of beer will give different flavour to the roasted chicken, some people says it doesnt really matter. But will give it a try next time. Stole this one from someone else but I’m sure they won’t mind if I share the goodness! This can be done on the grill as well but I haven’t tried that yet, as our grill is not tall enough. This is hands down the juiciest chicken you will ever taste. You can omit the butter if you want, I just use it to crisp the skin up real nice.Forgot to mention if you have leftovers, you can pull the meat off and use it for many other recipes later on! (Including my Mostly Homemade Chicken Noodle Soup and Chicken Crack.) Plain Jane -
