Ingredients

20 mins
4 servings
  1. 120 gramsgluten-free / plain flour
  2. 4 tbspgranulated sugar
  3. 1 tspbaking powder
  4. 1/2 tspsalt
  5. 1/8 tspxanthan gum if using a gluten-free flour blend
  6. 1 tspbicarb / baking soda
  7. 150 mlmilk alternative such as rice / coconut milk etc plus 1 tbsp
  8. 1 tbspwhite or cider vinegar
  9. 1/2 tspvanilla extract
  10. 200 gramsfresh blueberries
  11. 4 tspoil
  12. powdered sugar for topping

Cooking Instructions

20 mins
  1. 1

Mix the flour, sugar, baking powder, xanthan gum if using and salt in a bowl

  2. 2

In a cup mix together the baking soda, 1 tbsp milk, vanilla and the vinegar to make a fizzy leavener

  3. 3

Make a well in the flour and add the rest of the milk and the vinegar mixture, stirring until a smooth doughy batter is formed

  4. 4

Fold in the blueberries. It's okay if some break or mash while stirring. Let the dough stand a minute while you heat the oil in a frying over medium heat

  5. 5

Turn the heat down to medium low and drop in the dough by tablespoon, cooking for about 2 minutes per side, until lightly browned. Bubbles will start to pop on top when they're ready to turn. 3 at a time is plenty and it's a good idea to do a test one to make sure your oil is at the right temp and to adjust the cooking time so the middle is cooked through

  6. 6

When cooled, dust in powdered sugar or make a glaze from powdered sugar and a little milk. Yummy!

  7. 7

Serves 4 people, 3 fritters each
