Today I'm sharing this delicious recipe and participating in the #weekendreto. They have an incredible texture! Who said fall is sad??!! With these fritters, all your worries will disappear!!
Cooking Instructions

Roast or boil the sweet potato and mash it with a fork.

Separate the egg yolks from the whites. Beat the egg whites until stiff peaks form and set aside.

In a bowl, mix the flour, baking powder, sugar, and salt. Add the orange zest and egg yolks.

Now add the water in three parts while mixing, and then add the sweet potato puree and mix everything together.

Blend everything with a mixer to remove any lumps.

Now add the beaten egg whites in three parts, folding gently to avoid deflating them too much. Let the batter rest for 30 minutes.

In a pan, heat plenty of oil. When it's hot, add portions with a coffee spoon so they aren't too big. When they're golden on one side, flip them and fry the other side. They fry very quickly.

Transfer them to paper towels to drain excess oil.

While still warm, coat them in the sugar and cinnamon mixture.
