Our families FAVORITE broccoli soup! Kids love it and its great for a cold day or when your craving some comfort food.I made this in an attempt to recreat Panera Breads version. I think mine taste better because its fresh! & it lasts 7 days in fridge and it can be frozen as long as you dont add toppings to it and make sure its cooled before freezing.Enjoy :-D

My son had emergency dental surgery and is only able to eat soft foods. This is one of his favourite soups.

This soup has little to it and doesn't take a ton of work, but has really well-developed flavor and is as close as you can get to a real classic soup. I used fresh broccoli for this, but you can use frozen as well. I wouldn't cook it quite as long as the potatoes/onions, though. Frozen tends to take less time.

My daughter made this soup for us one day and it was a big hit. She found this recipe on-line somewhere. It is a thick soup, but you can add more chicken broth and milk if you prefer a thinner consistency. I omit the salt as there is enough in the chicken broth and the cheese. If you don't have swiss cheese, it is also good with just the cheddar cheese!
