Ingredients

  1. 1 tbspolive oil
  2. 30 gramsbutter
  3. 1 tspfresh ginger - grated
  4. 2chicken breasts - cubed
  5. 1 tspground coriander
  6. 1 tspground cumin
  7. 1/2 tspmasala
  8. 1/4 tspchilli powder
  9. 1/2 cuptomato puree
  10. 1 tbsptomato paste
  11. 1 tubnatural yogurt
  12. 1/4 cupthickened cream
  13. 1/2 cupbasmati rice - cooked
  14. 1 smalllot of coriander leaves to garnish

Cooking Instructions

    Heat the oil and half the butter in a wok or large fryingpan on medium -high heat and stir fry the chicken pieces until they change colour , remove from the heat and place in a bowl for later use .

    Reduce heat to medium and add the remaining butter , then add the ginger and cook for 1 minute then add the cariander , cumin , masala and chilli and cook for 1 minute , now add the tomato puree and tomato paste and simmer for 5 minutes , now return the chicken to the pan along with the yogurt and cream and simmer for a further 10 minutes until the chicken is cooked through .

    place cooked basmati rice onto a plate and ladle the butter chicken over the rice and if desired , garnish with fresh coriander leaves and serve with pappadums . enjoy . :-)

this is one of the easiest curries i have ever made. I did not have any natural Youghurt or double cream. I used single cream and followed the rest of the recipe to the letter. absolutely love it. I will definitely be making it again.
