Rouladen!!! Cabbage stuffed steak bundles... my vesion.... i don't the roulade has cabbage in it. :-)
it was VERY GOOD!!! But time consuming.... i finished off in pressure cooker for 30 minutes :-D

Cooking Instructions

VERY GOOD!!! but it is time consuming so this is a perfect special occasion meal. Maybe an anniversary or birthday... Maybe an impressive dinner party such as in-laws, business, friends etc...

Fry bacon until crisp ... drain on paper towel. set aside.

cook cabbage in bacon drippings. when cabbage is wilted add garlic and onion. 1/2 tsp salt and 1/4 black pepper. take skillet off flame to cool. place mixture in bowl for assembly.

DO NOT CLEAN SKILLET.

use hand to crumble bacon... put in cabbage mixture. add dill pickle relish and mix everything well.

cut steak into 4 pieces. pound steak with a mallet. place plastic wrap over the steak. flip it over and pound the other side. use a paint brush and put a very thin layer of Dijon mustard on the upside of the steak. put about a palm size amount of the cabbage mixture.

starting at the small end of the steak, roll the steak tightly around the cabbage mixture. tie the meat bundles with cooking twine.

put a splash of oil in the pan where cabbage was cooked. fry the meat bundles until they are browned on the outside. take them out of the skillet once brown.

add carrots, celery, and onions.

stir veggies to semi soft. deglaze skillet by adding 1/4 cup red wine and when hot again add canned tomatoes. add sugar to cut through the tart/ acidic taste.

place meat bundles back in sauce and look cook for 45 minutes.

taste sauce to see if it needs s&p

steak should be very tender.

My husband loves the Stouffer's Grandma's Chicken Bake, but it only comes in a family size... And it just isn't big enough. I played around until I actually like mine better. This is perfect for a FREEZER CASSEROLE....do not add corn flakes until ready to bake. Sometime a bake chicken or have leftover turkey. I bake a lot of chicken in one day and de- bone so that it is fixed for quesadillas, chicken salads etc. I freeze the done chicken to help with time. Baked or rotisserie chicken taste much better... These are my mom's cabbage rolls that I have been eating since I was a child.Select a pot in which you can tightly line up the cabbage rolls so that they don't move around, and slow-boil over a low heat so that they don't dance around. I have been wanting to try this recipe out for a long time and am more than pleased with the way it turned out!The ribeye cap is the same cut that you see from time to time at the meat counter in the form of Spinalis Steaks. These are just pre rolled, tied and sliced without any stuffing to be grilled.This is a cut of ribeye meat so it is beautifully marbled and lends itself well to be cooked rare to medium rare just like a steak. Stuffing with the veggies and Parmesan cheese just adds a whole other depth of flavor than just a grilled steak. I can't wait to have this again! Maybe next time will be cooked on a grill to add the extra flavor of smoke. jason williams -
