Ingredients

  1. 6 slicethick Applewood Smoked Bacon
  2. 4 clovegarlic, finely chopped
  3. 2meduim onions, finely chopped
  4. 1red bell pepper, finely chopped
  5. 1yellow bell pepper, finely chopped
  6. 3 tbspchili powder
  7. 1 tbspground cumin
  8. 1 tbspchipolte chili powder
  9. 1 tbspsmoked paprika
  10. 2 tspdried oregano
  11. 1 tspsalt
  12. 1 tspground black pepper
  13. 1 lbground sirloin beef
  14. 1 lbItalian sausage, ground pork (meduim or hot)
  15. 1(12 ounce) can of Budweiser or your favorite beer
  16. 1(15 ounce) can of black beans
  17. 1(15 ounce) can of kidney beans (red beans)
  18. 1(24 ounce) can of crushed tomatoes
  19. 1(24 ounce) can of diced tomatoes

Cooking Instructions

    In large heavy seasoned cast iron skillet, cook the bacon over medium heat until lightly crisp, stirring occasionally. Once the bacon is browned, add the garlic, onions,bell peppers, chili powder, cumin, chipotle chili powder, oregano, and smoked paprika salt and pepper. Cook until the vegetables are tender and seasonings are aromatic. Add the beef and pork, break it up with a wooden spoon. Once the beef/pork is brown and no longer pink, add contents to a large pot. Stir in the beer and beans. Toss together; then add the crushed and diced tomatoes. Turn the heat down to low and simmer for 2 1/2 to 3 hours.

When you add the beans, do you drain them first or add the whole can to the pot?
