Classic Chili

This is the best-tasting chili that I've ever had. It's nothing adventurous -- just classic and delicious!

For fun, add some toppings to your bowl! Some of my favorites include:
- green onions
- cilantro
- home-made mac & cheese
- Fritos corn chips
- Sour Cream & Cheddar Ruffles potato chips (but go light! Their flavor can be over-powering)
- shredded cheddar cheese
- and of course regular sour cream

Maybe don't try all those toppings at once, but in smaller combinations, they can be delicious! :-)

Ingredients

  1. Veggies
  2. 1 tbspvegetable oil (for sautéing)
  3. 1large white onion (chopped)
  4. 2bell peppers - 1 red & 1 green (chopped)
  5. 1/2 cupcelery (chopped)
  6. Meat
  7. 2 lblean ground beef
  8. Sauce
  9. 30 oztomato sauce (no/low sodium)
  10. 28 ozcrushed tomatoes (undrained)
  11. 2 tbspWorcestershire sauce
  12. 3 tbspchili powder
  13. 1 tbspgarlic powder
  14. 2 tspground cumin
  15. 1 tspItalian seasoning
  16. 1 tspsmoked paprika
  17. 1 tspchipotle (or regular) pepper flakes (adjust to taste)
  18. (to taste) salt
  19. (to taste) pepper
  20. 1 cupwater (if needed)
  21. Beans (OPTIONAL)
  22. 32 ozred kidney beans (rinsed and drained)

Cooking Instructions

    Prep ingredients.

    Heat a soup kettle or Dutch oven. Once hot, heat the oil in prep for sautéing the veggies.

    Add the Veggies and sauté until tender. ~15 min.

    If you need the room, remove the Veggies from the pan. Brown the Meat. ~15 min.

    When the meat is brown, drain the juices and oil from the pan.

    Stir in the Sauce ingredients with the Meat and Veggies.

    TIP: start light on the salt and pepper. More can be added later, to taste. Only add the water if the consistency is looking thicker than you prefer.

    Bring to a boil, then reduce heat and simmer for at least 20 minutes. Stir occasionally.

    The flavor develops more over time, so if you have the time, continue simmering for another 30-120 minutes (or more!)

    Taste periodically through cooking. Add salt, pepper, and/or water as needed.

    If you're someone who likes Beans in their chili, add them 10-20 minutes before you're ready to eat. Simmer until the Beans are heated through.

    Otherwise, skip this step!
