Ingredients

4 servings
  1. 4/5 lbsground beef (lean ish)
  2. 1/5 lbsground pork
  3. 1medium yellow onion (Chopped) (Can substitute white)
  4. 15 ozkidney beans (1 can) (Can substitute pinto)
  5. 14 1/2 ozfire roasted diced tomatoes (1 can)
  6. (Don't like largish chunks of tomatoes in your chili? You can substitute petite diced, but you won't find these in fire roasted)
  7. 2-4 ozdiced jalapeños (optional but tasty) (1/2 to 1 small can)
  8. 1.25 ozChili seasoning (1 packet)
  9. 8 ozsliced baby bellas (optional) (1 basket)
  10. Optional toppings:
  11. Shredded cheddar cheese (to taste)
  12. Sour cream (to taste)
  13. Sliced black olives (to taste)
  14. Tabasco sauce (to taste)

Cooking Instructions

  1. 1

    Grab a 3+ quart pot at minimum. (preferably 4+ quart).

    In your pot, brown the beef and pork together along with the onions. Drain off excess fat.

  3. 3

    Add the kidney beans, the tomatoes and the jalapeños (optional) without draining the cans first and mix together. This is the liquid that the chili will stew in.

    Mix in chili seasoning.

  5. 5

    Bring to a boil. (About 5-10 minutes)

    Simmer covered for 60-90 minutes. (I prefer around 90)

    Serve and enjoy!
