This is my version of a fudesicle, its made with "lite"coconut milk, semi sweet chocolate and vanilla, that is it! It makes a rich creamy refreshing chocolate cooler!

Ingredients

10 mins
  1. 113 ounce can " lite " coconut milk
  2. 12 ozsemisweet chocolate, chopped
  3. 1/2 tspvanilla extract

Cooking Instructions

    Place chocolate in food processor and pulse until course ground.

  2. 2

    Heat coconut milk in a saucepan or microwave just to a simmer, don't boil just get hot.

  3. 3

    Add to chocolate in food processor, add vanilla whirl until very well mixed.

  4. 4

    Pour into your popsicle containers and freeze until frozen, overnight is best.

  5. 5

    Note, The can of coconut milk I have used is actually labeled 13.66 ounce, just use the entire can.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.

I used unsweetened coconut milk so it tasted like dark chocolate. It tasted out-of-this-world amazing.
