My aunt used to make these when I was growing up. Filling, cheesy, and definitely a crowd pleaser!

Ingredients

45 mins
8 servings
  1. 2 lb80/20 hamburger meat (you can use ground turkey if you prefer)
  2. 1 smallwhite or yellow onion (chopped)
  3. 15flour torillas (give or take a few)
  4. 16 ozshredded cheddar cheese
  5. 1 cansmall cream of mushroom soup
  6. 24 ozVelveeta (cubed)
  7. 1salt, pepper, garlic, and cayane pepper (to taste)

Cooking Instructions

45 mins
  1. 1

    Preheat oven to 375°

  2. 2

Brown hamburger meat and onions together, seasoning to taste. Drain off the grease.

  3. 3

In a microwaveable bowl, cube the Velveeta up and stir in half of the cream of mushroom soup. Microwave for 5mins, stirring occasionally. When it's almost melted, mix in the rest of the soup and reheat. Mix well until smooth.

  4. 4

Mix shredded cheese into meat and onions and reseason if necessary. It will make a doughy texture.

  5. 5

Roll meat mix into tortillas and put into a casserole dish sprayed with nonstick cooking spray. Feel free to cram into the pan!

  6. 6

Pour the cheese mix over the tortillas and cover completely.

  7. 7

Cover in foil and bake for 30mins. Take off the foil and bake for another 15, or until it gets brown and bubbly on top, and scoop and serve!
