This recipe came about because we are often disppointed with crab cakes, the crab gets lost in bread crumbs and fillers. Here jumbo crab chunks are gently combined with a simple dressing and baked for a light delicious crab cake!

Ingredients

  1. 1 lbjumbo lump crab meat
  2. 1FOR DRESSING
  3. 1/4 cupmayonnaise
  4. 1 tspfresh lemon juice
  5. 1/2 tspWorchestershire sauce
  6. 1/2 tspdijon, mustard
  7. 1/2 tsphot sauce, such as franks brand
  8. 1/2 tspblack pepper and salt to taste
  9. 1/2 tspcajun seasoning
  10. 1 tbspchopped green onions and more for garnish
  11. 1 tbspfinely chopped celery
  12. 1 smallminced garlic clove
  13. 2 tbspshredded pepper jack cheese
  14. 1 largeegg, beaten
  15. 1FOR TOPPING
  16. 3 tbspmelted butter
  17. 1/4 cupfresly grated parmesa cheese
  18. 4strips of bacon, cut into 1 inche pieces

Cooking Instructions

    Preheat oven to 425

    In a bowl mix all dressing ingredients, add crab and ever so gently mix with dressing so as not to break crab up. With hands mold into dome shaped crab cakes, place on a butterec baking dish. Drizzle melted butter over each crab cake, sprinkle with parmesan cheese and divide bacon on top of each cake evenly.

    Bake about 10 to 15 minutes util heated and bacon is crisp. Garnish with green onions and offer melted butter for dipping.

    Serve with crusty bread and cole slaw or a green salad!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
