Ingredients

  1. 100 gramssunflower spread / butter
  2. 100 gramssugar, white or brown
  3. 2medium over ripe bananas, well mashed
  4. 3 tbspmilk of choice - gluten free flour will need a little extra
  5. 100 gramsplain / gluten-free flour
  6. 2 tspground cinnamon
  7. 3/4 tspbaking powder
  8. 1/2 tspbaking soda / bicarb

Cooking Instructions

  1. 1

    Put the butter into a microwave safe glass dish or bowl, litre sized, and heat on high until melted, 30 seconds or so

  2. 2

    Mix the milk, sugar and mashed bananas into the melted butter, then mix in the flour, cinnamon, baking powder and soda

  3. 3

    Heat on high (my microwave is 800W) for 8 - 10 minutes or until risen and cooked right through. It'll pull away from the sides of the bowl when done

  4. 4

    Serve immediately with custard, ice cream or caramel sauce
