Ingredients

  1. 2 cupAll purpose flour
  2. 2 cupWhite sugar
  3. 2 tspBaking soda
  4. 2 tspGround cinnamon
  5. 1 cupVegetable oil
  6. 3 cupGrated carrots
  7. 4Eggs
  8. 1 tspSalt
  9. 8 ozCream cheese (room temp)
  10. 1 stickButter
  11. 1 tspVanilla extract
  12. 1 boxConfectioners sugar
  13. 1 cupChopped pecans

Cooking Instructions

    Set oven to bake at 350°F

    Mix dry ingredients for cake batter in large bowl

  3. 3

    Add vegetable oil and blend by hand

  4. 4

    Slowly beat in each egg

  5. 5

    Add grated carrots and continue mixingon low speed until thoroughly mixed

  6. 6

    Bake in 2 3"x9" cake pans for 30 minutes or until cooked (toothpick comes out clean)

    For frosting, mix butter and cream cheese, both at room temperature, together

  8. 8

    Slowly add in confectioners sugar until all is well mixed in

  9. 9

    Mix in vanilla extract and pecans

  10. 10

    Once cakes are cooled, frost away!

DO NOT USE LOW FAT CREAM CHEESE!!!! It will melt. Must be made in cool house. I always double the icing. No more than 5-6 cups of powdered sugar or the more sugar will melt it!
