For the mince, if using new stuff, dice the onion and fry the mince, onion, oil, tomato paste, and sugar in a large pot until cooked through. Then add the passata and oregano and simmer for a hour.
If you are using leftovers, add water and reheat the mince mixture on high heat for10 minutes. Then turn down to medium until serving.

For the gucamole, mash the avocado until a dip consistency is achieved and then add in the lime juice and salt and mix through.

The rest of the parts are quite easy. For the tomatos, dice the tomatoes into medium sized chunks. For the cheese, grate the cheese (we use Colby or cheddar) and for the corn chips, simply open the bag. Serve the mince, gucamole, tomato and cheese in separate bowls, the corn chips in their bag and get stuck in. I eat the corn chips with the toppings on top.
