Ingredients

  1. 30 ozCanned garbanzo beans
  2. 4 tbspOlive oil
  3. 4Minced garlic cloves
  4. 1/2 tspRed pepper flakes
  5. 1Salt and pepper to taste
  6. 1/2 cupCrumbled feta cheese
  7. 1/2 cupLarge olives
  8. 6 tbspChopped oregano
  9. 1as needed Lemon juice and red wine vinegar
  10. 2 cupElbow macaroni
  11. 1Sliced onion
  12. 1 canCorn

Cooking Instructions

    Preheat oven to 375°F

    Place beans in oven safe dish so that they are in one single layer.

    Toss with olive oil, red pepper flakes, garlic, salt and pepper.

    Place in preheated oven and bake for about 30 minutes or until outside are just turning crisp.

    Remove from heat and allow to cool completely.

    Prepare macaroni as directed on box

    When tender, drain and rinse with cold water. Place into large bowl.

    Add beans, olives, tomatoes, and oregano and corn.
