Kullhad ki masala chai
This tea is very good in winters to keep cold, cough and body ache at bay.
It keeps us warm and cosy throughout the day.
My husband makes this tea and now my sons also follow the same recipe.

Ingredients

15 minutes
2 servings
  1. 2 cupswater
  2. 1 cupwhole milk
  3. 2tspgranulated sugar or to taste (about 1 heaped teaspoon per serving, traditionally)
  4. 1tbspheaped of black tea leaves
  5. Add any (or all) of the following to your chai:
  6. (I have added all)
  7. 1/2 inchginger or
  8. 1/4 tsp saunth powder
  9. 4saffron strands
  10. 2 leavesholy basil
  11. 2 pinchblack pepper
  12. 1/8 tsp carom seeds (ajwain)
  13. 1bay leaf
  14. 2 pinchcinnamon powder or any other spices or herbs you might want
  15. 1cardamom pod, crushed
  16. 1/8 tsp pinch of fennel seeds (about 10 seeds)

Cooking Instructions

    Boil water in a sauce pan.

    Bring water to a simmer for 5 minutes with all desired spices in a medium saucepan.

    Reduce heat to lowest setting and add tea leaves and sugar.

  4. 4

    Steep until tea takes on a deep, tan colour, in about 3 minutes, stirring occasionally.

    Add milk and let it brew for another 2-3 minutes.

    Switch off the flame and strain hot chai into the cups/kullhad(terracotta handleless cup)

  7. 7

    Add 2-3 saffron strands in each cup and serve masala chai hot with Parle-g and dry fruits.
