Shaanka Fish Sandwich Shaanka Fish Sandwich
What is “Shaanka”? You would ask. It’s not a what, it’s a who.“Shaanka “ is a term of endearment that we used to call our daughter.Shaanka is a patient and empathetic person. The traits she got from her father. She is very strong in mind, a trait she inherited from my mother. She is happily married, the second time, to a young man we call Best-Son-in-Law-Ever. No need to tell you the reason we call him with that term of endearment.I thank God for that.Back to the recipe.Ansley Eats the Street, Season 1: episode 1, Istanbul Street foods. This episode inspired me to create this recipe. In the show, a fish sandwich with grilled mackerel was served on a bed of veggies that seemed like to have been seasoned in some kind of dressing.Having no clues of what exactly was in the original recipe, I decided to create my own. As Shaanka is very adventurous in trying new thing, I named this recipe after “her name”. 2choi -

Croquettes with Demi-glace Sauce from Leftover Hayashi Rice Croquettes with Demi-glace Sauce from Leftover Hayashi Rice
When you had hayashi rice for dinner on the previous day... sometimes you're left with such small amount of the sauce that's not even enough to serve on rice. It's those times when you feel like shouting, "Who was the last one to eat this!?" These croquettes are perfect for that situation. In Step 2, keep on stirring to prevent the sauce from burning. Try scooping it up with a ladle, and see if it keeps its shape when you drop it into the pan. When adding flour, make sure to add in small batches to avoid any lumps. Please add a small amount of ketchup if it tastes too plain in Step 3. Recipe by Miashanmama cookpad.japan
