Cooking Instructions

Pre heat your oven and set it to 180° for 10 minutes. In a bowl,beat the eggs then add sugar and beat till fluffy.

Add cinnamon,mixed spices and nutmeg to the eggs and sugar mixture. Mix well.

Add sunflower oil and mix well. Don't over mix though as it will be dense.

Mix flour and baking powder in a different bowl then add them in batches to the wet ingredient as you mix. Use a spatula to mix well.

Finally,peel your very ripe bananas and mash them in a different bowl using a fork. Add the mashed bananas to the cake mixture. Don't over mix.

Slightly grease your loaf pan and pour in your banana cake mixture.

Put it in the oven at 180° for 1 hr.

Insert a toothpick at the center and if it comes out clean,your cake is ready.

Remove the cake from the oven and let it cool completely.

Enjoy your banana loaf cake with a beverage of your choice. I love it with hot masala and cardamon tea :)

I've tried making lots of different banana cakes, but if I mixed in lots of bananas, the cake would always be too heavy. I tried thinking up a recipe where I could still use lots of bananas but result in a light yet satisfying cake,. I was aiming for something between a genoise and a pound cake. You can definitely taste the banana, but this cake is still soft and moist and has the best balance of any cake I've made until now.I recommend using fully ripened bananas. If the bananas aren't fully ripe then increase the amount of sugar. Even with ripe bananas, this is not very sweet. I also recommend using unsalted butter.
