Really speedy lunch, all you need to go with it is some crusty french bread and maybe a few tomatoes or some caramelized onion chutney. Serves 2 for lunch, 3 or 4 as an appetizer.

Ingredients

2 servings
  1. 1whole camembert
  2. dried thyme
  3. black pepper

Cooking Instructions

  1. 1

Preheat the oven to 180C/Gas 4. Take the camembert out of its box and unwrap it. Throw away the paper wrappings, then gently return the naked cheese back into its box. Sprinkle the top with some dried thyme and black pepper

  2. 2

Put the lid back on, sit the box in a small baking tray, and place in the oven.

  3. 3

Alternatively, if you'd rather have a slightly crusty top, make a few snips in the skin with a pair of scissors and place in the oven uncovered.

  4. 4

Bake for about 20 minutes until the inside is oozing. Serve straight away with French bread, toast or vegetable crudites.

I enjoy cooking mostly because I like eating, but also because it's a great way to relax at the end of the day. I work in book publishing and especially enjoy creating cookbooks written by cooks who love cooking and sharing food rather than creating show stopping dishes that take days to put together. As Nigel Slater would say; 'we are, after all, simply making ourselves something to eat'. I live with my lovely daughter Isobel who rarely pays any kind of compliment but will occasionally admit something I've cooked was quite nice, and our dog Piper, who will eat anything.
