Cooking Instructions

Heat cashews in pan until toasted, then put aside and crush.

Add oil and curry paste to pan and heat onion for 5 minutes.

Stir in paneer and cook for 2 minutes. I also added some left over mushrooms.

Stir in spinach and cook for about 5 minutes until it’s wilted and mixed in.

Add crushed cashews on top and serve!

This is one of my favorite curries. A person can consume about 250 g of spinach with it, and the paneer that goes inside is yummy as well. A curry substituted with chicken is called "saag chicken," and the version with potatoes is called "saag aloo."Back in India, sometimes we substitute paneer with chicken or potatoes when making this spinach curry. #greenveg - This is a simple stir fry made with kulfa saag (purslane leaves) and some paneer. Kulfa is almost similar to methi (fenugreek leaves) and is slightly tangy in taste. It is a flavorful side dish that can be prepared in a jiffy. I added some pani puri masala to the end product but you can skip it if you want. Best enjoyed with either rice or chapatis. Bethica Das -
