Ingredients

2 servings
  1. 225 gpaneer
  2. 200 gspinach
  3. 50 gcashews
  4. Halfonion
  5. 2 tspRogan josh curry paste
  6. 1 tbspolive oil

Cooking Instructions

  1. 1

    Heat cashews in pan until toasted, then put aside and crush.

  2. 2

    Add oil and curry paste to pan and heat onion for 5 minutes.

  3. 3

    Stir in paneer and cook for 2 minutes. I also added some left over mushrooms.

  4. 4

    Stir in spinach and cook for about 5 minutes until it’s wilted and mixed in.

  5. 5

    Add crushed cashews on top and serve!
