Cooking Instructions

Beat sugar and butter until smooth. Add the egg and vanilla essence and combine.

Add the rest of the ingredients and fold with hands.

Make sizable balls and roll in the 80g extra dessicated coconut set aside.

Place in a lined baking sheet
- 5
Press slightly with a spoon or water glass to flatten it slighly. Dont press it too much just alittle, we don't want a very thin cookie

Bake at 160 degrees in a preheated oven.

Bake for 20 mins or until they brown nicely.

I was given a container of coconut oil and really was not sure what to try it in first. Cookies seemed a natural choice for the flavor, adding some coconut flakes and mini chocolate chips. The coconut flavor is mild and delicate, the cookie soft and slightly chewy in the middle with slightly crisp edges.
