Chocolate & Vanilla Cupcakes

Ingredients

  1. 300 gunsalted butter
  2. 150 gcaster sugar
  3. 3medium eggs
  4. 150 gself raising flour
  5. 1 tspbaking powder
  6. 35 gcocoa powder
  7. 300 gicing sugar
  8. 2 tbspmilk
  9. 3 tspvanilla extract

    Pre-heat oven to 180 degrees.

    Add caster sugar, eggs, and half the butter to a large bowl and mix together with an electric mixer until smooth.

    Fold in the flour and baking powder.

    Mix the cocoa powder with 5 tbsp of boiling water and mix together into a thin paste.

    Add the cocoa to the bowl and mix in until fully integrated and smooth.

    Put a spoonful of the mixture into each of the cupcake bases. This mix should be enough for 10 cupcakes.

    Put the cupcakes into the oven and bake for 20 minutes, and check that a knife comes out clean once they're done.

    Put the cupcakes out on a rack to cool.

    Add the remaining butter to a bowl and beat with an electric mixer until soft and fluffy.

    Slowly beat in the icing sugar (sift in if it's bitty).

    Add the milk and vanilla extract and mix thoroughly.

    Cut a circle from the top of each cupcake with a small knife. Put a spoonful of the icing into the hole and put the circle back on top.
