I needed an easy "on demand" cookie recipe...

My nephew dubbed these potatoes ‘special potatoes’ 30 years ago. Every time he came to my house, this is what he wanted with supper. I’m still making them. It came out of stewed potatoes. When I want something similar to the center of a baked potato, but don’t want to wait that long to bake it, I make these. Use a thin skinned potato that you don’t have to peel or peel your potatoes. It’s up to you!

This is easy to make, and ALWAYS a hit! Very good to bring to get togethers, pot lucks, etc. You'll come home with an empty dish!

Sometimes I want Mac & cheese and didn’t want to make a large pan so I used an 8x8 and it still tastes great!

For an even better result, I mix the classic flavor of French coffee with hazelnut flavor. In a bowl, I add equal amounts of classic French coffee (I prefer Jacobs) and hazelnut coffee (also Jacobs) and stir with a spoon. I store it in an airtight jar.
