Ingredients

  1. 1 tablespoonOlive oil
  2. 1 poundGround chicken
  3. 4 clovesGarlic, minced
  4. 1/4 cupOnion, diced
  5. 2 stalksGreen onions, thinly sliced
  6. 1/4 cupHoisin sauce
  7. 2 tablespoonsSoy sauce
  8. 1 tablespoonRice wine vinegar
  9. 1 tablespoonFresh ginger, grated
  10. 1 tablespoonRed curry paste
  11. 1 (8 ounce)can Water chestnuts, drained and diced
  12. 1/2 pieceRed bell pepper, diced
  13. 1/2 pieceCarrot, finely chopped
  14. to taste Kosher salt and black pepper
  15. 1 headButter lettuce or romaine leaves

Cooking Instructions

    Heat olive oil in a pan over medium-high heat. Add ground chicken and cook until browned, crumbling as it cooks. Drain excess fat.

    Add garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger, and red curry paste. Cook until onions are translucent, about 1-2 minutes.

    Stir in water chestnuts, green onions, red bell pepper, carrot, and basil. Cook until just tender, about 1-2 minutes. Season with salt and pepper.

    Spoon the chicken mixture into lettuce leaves and serve taco-style.
