Ingredients

  1. 500 gflour
  2. 200 gmargarine
  3. 150 gsugar
  4. 3 tspbaking powder
  5. 3 Tbspmilk
  6. 2 Tbspsultanas (pre soaked to soften)
  7. 2eggs
  8. 100 mlMilk to milk wash

Cooking Instructions

    Prepare a baking sheet by scraping off any crumbs, dust lightly with flour.

    Weigh all ingredients, sift flour and baking powder onto your working surface.

    Rub in margarine until the mixture resembles fine breadcrumbs, add the sultanas

    Make a well at the centre, pour in sugar. Milk and eggs, stir to dissolve the sugar (it may not dissolve completely). Incorporate the flour to make a dough, do not over mix.

    Roll out to 1/2 inch thickness, cut out with round cutter, arrange on the tray, milk wash and bake @180 degrees for 25 minutes or till well browned but not burnt.

    Cool on a wire rack, serve with warm milk or a cup of African tea!
