Ingredients

  1. 250 gmSweet Potatoes
  2. 3-4 tbspgrated Fresh grated Coconut
  3. 1/2 CupRoasted Peanut Powder
  4. 2 tbspGhee
  5. 1/2 tspCumin Seeds
  6. 1 tbspFresh Coriander Leaves, finely chopped
  7. 2-3Green Chillies, Slit from the Centres
  8. 1/2 tspSugar
  9. 1 tspLemon Juice
  10. Salt to Taste

Cooking Instructions

    Wash the sweet potatoes well. Peel off the skin and grate the sweet potatoes. Set aside.

    In a pan, heat the ghee, add the cumin seeds, green chillies and allow them to sizzle for a few seconds.

    Add the grated sweet potatoes, mix well. Now add peanut powder sugar, salt to taste and again mix well and Cover & cook for 5-7 mins on low-medium heat, adding a few drops of water on the lid. Stir once or twice in between.

    Now add the coconut, leaving aside some to garnish in the end. Add the lemon juice. Cover and cook for 1 minute.

    Take off heat, top with peanut powder, grated coconut & fresh coriander. serve hot Sweet Potato upma. Enjoy!
