Spicy, fiery, zanzanit, and tasty Misal Paav is everyone's favourite in Maharashtra.It originated in Kolhapur - Satara - Pune region and now it's available all over.Misal is a thick , rich and spicy gravy called Usal made with sprouted Moong, Matki, ( whole lentils), tomato, Onion, ginger and garlic, Misal Masala and spices . A special red rassa or thin gravy is poured on top . Served with a savoury farsan or mixture, chopped onions and lemon at side. This dish is a complete meal in itself and incredibly tasty and droolsome!

Steps

First, prepare the Rassa or Tarri for topping the Misal. Heat 1 tablespoon oil, add 1 chopped onion, ginger garlic paste and saute till golden.

Then add 2 chopped tomatoes, 1 tablespoon red chilli powder, 1 teaspoon turmeric powder, 1/4 teaspoon asafoetida, 1 /2 teaspoon and saute till soft and combined well. Cool to room temperature and blend to a smooth paste.

Then add 1 cup hot water and give a boil. Add 1 teaspoon garam masala and 1 teaspoon kashmiri red chilli powder mixed in 1 tablespoon oil and mix in. The oil will float on top. Keep this aside covered till use.

To make the Usal for Mosal paav: Pressure cook both the sprouted lentils in 2 cups water and 1 teaspoon salt for 4 whistles. Cool and keep ready. Then heat 1 tablespoon oil. Pop mustard seeds, cumin seeds and saute 2 chopped onions. Blend together coconut, green chillies, ginger, garlic to a smooth paste and add to the onions.

Then add tomato puree and cook for 5 minutes. Then add the cooked sprouts, cook for 5 minutes. Then add curry leaves, asafoetida, turmeric powder, cumin powder, coriander powder, Kolhapuri Misal masala and 1/2 cup hot water or as per your taste. Add salt and jaggery. Cook covered till aromatic for 5 minutes more. Your Usal is ready.

To serve, transfer usal to a large serving bowl. Pour the Rassa on top as per taste. The top with a large portion of mixture or serve the mixture separately. Top with chopped onions, coriander leaves and place lemon wedges in the side. Sieve with hot, butter roasted paav buns and enjoy!
