Karele ki sabzi.. An easy and quick dish that can be made within minutes. It goes very well with chapati, parathas or as a side dish with dal rice.

Karele ki sabzi.. An easy and quick dish that can be made within minutes. It goes very well with chapati, parathas or as a side dish with dal rice.
Cooking Instructions

Cut the karela into thin round slices.

Add a tsp of salt to sliced karela. Mix well. Cover and keep aside for 30 minutes.

Heat oil on medium flame in a wok.

Add cumin seeds, fennel seeds and mustard seeds. Let them crackle.

Add in the sliced onion and grated ginger. Saute on medium flame till onion turns translucent.

Squeeze the karela slices well to remove the bitter juice. Discard this bitter juice and add squeezed karela slices to the wok along with turmeric powder and salt. Mix well. Cover and let it cook for 2 minutes on low flame.

Add in the red chilli powder and coriander powder. Mix and cover with a lid. Cook for more 5 minutes on low flame.

Keep stirring occassionaly.

Now add in the amchur powder, garam masala powder and sugar. Mix well and cook for more 1-2 minutes, uncovered.

Karele ki sabzi is ready to serve.

Serve hot with chapati or paratha.
