For this Easter if you are looking for a bready variety then here I am with a recipe know as American Khachkar Easter beard. Khach literally means Cross and kar means stone. This shape represents a stone stele with a carved image of cross. However, you may use this recipe and be creative with your design skills. The recipe is basically of Choereg Bread.

Ingredients

  1. 1 cupMilk for PROOFING
  2. 1 tablespoonsugar
  3. 2 teaspoonsinstant yeast
  4. 2 TeaSpoon yeast mixture FOR THE DOUGH
  5. 5 cupsall-purpose flour
  6. 3/4 cupunsalted butter
  7. 3 Eggs lightly beaten
  8. 1 teaspoonsalt
  9. 1 Tablespoonfennel seeds freshly ground
  10. To finish and bake
  11. 1/2egg lightly beaten
  12. 1 Tablespoon(more or less) sesame seeds
  13. 1/2 tablespoonNigella seeds

Cooking Instructions

    TO PROOF: Combine the milk, sugar and yeast and stir to combine.

    Let sit for 3 minutes until nice and bubbly.

    FOR THE DOUGH:Sieve 5 cups of all-purpose flour, add salt, fennel seeds, butter at room temperature and gently rub against the flour to form crumbles.

    Add in the proofed yeast mixture in batches. Here I have taken 4 large eggs and whisking it. For preparing the dough I am using 3.5 eggs batter and the remaining egg batter I will use it later for brushing over the dough.

    Once the ingredients are all combined, transfer it to the work surface that is dusted with flour and thereafter rub and knead the dough very well. Do not over dust the dough and make it dry.

    The dough is ready and it’s time to proof. Grease a bowl with olive oil or any other oil and finally pour some oil over the dough and spread well. cover and keep it for approx. 1 hour to 2 hours until you see the dough is more than double the size.

    Punch out the air and transfer the dough on to your work surface and give a good knead. You can design any shape. Since I have planned to make Kachkar bread and based on my design layout, I need 10 even balls. So I cut them in 10 even portions and rolling them this way.

    Before I roll them in ropes I would recommend to first flatten it out in rectangular shape and then roll it into long thin ropes. This way the ropes will have an even shape and no cracks in between.

    Line your baking tray with parchment paper and then start arranging the ropes as per your design.

    Gently brush all over the egg batter. Sprinkle white sesame seeds and for the final touch add nigella seeds. Here it goes into the preheated over to bake at 180 degree for 22 – 30 minutes, until the top is brown in color

    Allow it to cool down and serve it for breakfast or snack with a nice cup or coffee or serve it with some Butter and jam
