முதலில் பருப்பை வேகவைத்து கொள்ளவும், பிறகு காய்கறிகளை நறுக்கி கொள்ளவும், பிறகு தயிரை ஒரு ஜாரில் நன்கு அடித்துக் கொள்ளவும், பிறகு ஒரு ஜாரில் தேங்காய், பச்சைமிளகாய், சீரகம், மிளகு, மஞ்சள்தூள், போட்டு அரைத்து எடுத்துக் கொள்ளவும்,

பிறகு ஒரு கடாயில் சிறிது எண்ணெய் ஊற்றி கய்ந்ததும் அதில் கடுகு கறுவேப்பிலை காய்ந்த மிளகாய் 2 போட்டு பொரிந்ததும் அதில் வெங்காயம், தக்காளி, காய்கறி சேர்த்து 1நிமிடம் வதக்கி அதில் அரைத்த மசாலா சிறிது தண்ணீர் ஊற்றி வேகவிடவும், காய்கறி வெந்ததும் அதில் வேகவைத்த பருப்பு தயிர் ஊற்றி 2 நிமிடம் கொதிக்க விட்டு மல்லிதழை தூவி இறக்கவும். சுவையான மோர் சாம்பார் தயார்....

I poach the meat in sake to prevent it from becoming tough, and use as little soy sauce as possible in the seeping sauce.Brown the meat to seal in the juices.If you poke the meat several times with a skewer before putting in the bag, the sauce flavors will penetrate well.The flavors will blend easily if you put the bag with the meat in a bowl and turn it over occasionally.
