Tabouli is a middle Eastern vegetarian salad made out of bulgur or cracked wheat. Along with a mint dressing, parsley, tomato, cucumber are added to the soaked cracked wheat to make this salad. Mint dressing and freshly chopped parsley gives it a very nice aroma. This is a very refreshing and healthy salad.

Ingredients

  1. 1/2 cupcracked wheat or daliya
  2. 1 cupwater
  3. 3/4 teaspoonsalt divided
  4. 2 tbspolive oil
  5. 2 tbsplemon juice
  6. 2 clovesgarlic
  7. 1/4 cupmint leaves
  8. 1/2 teaspoonblack pepper powder
  9. 1/2 cupchopped tomato
  10. 1/2 cupchopped cucumber
  11. 1/2 cupchopped parsley

Cooking Instructions

    In a bowl, add cracked wheat along with 1/4 teaspoon of salt and mix it well. Now add one cup of water and let it soak until the cracked wheat is soft. This will take around 2 hours. You can even add boiling water to it and soak it for 30 minutes.

    To make the dressing, in a mixture jar, add olive oil, garlic cloves and lemon juice. Churn it to make it thick. Now add mint leaves, salt and pepper to it and blend it again into a smooth paste.

    Drain water from cracked wheat and take it in a bowl. Now add the mint dressing and mix it well.

    Add chopped cucumber, tomato and parsley to it and give it a good mix. Adjust the seasoning and mix it well.

    Serve tabouli as a side dish with any middle Eastern main dishes. It can be even prepared in advance and kept in the refrigerator but it tastes best at room temperature so before serving make sure it is at the room temperature.
