Ingredients

10-12 muffins
  1. 2 cupsall-purpose flour
  2. 1 1/2 cuppowder sugar
  3. 3eggs
  4. 200 mlvegetables oil
  5. 1 tspbaking powder
  6. 1 tspbaking soda
  7. Pinchsalt
  8. 1 cup (250 ml)buttermilk
  9. 2-3 dropvanilla essence
  10. 1/2 cupcocoa powder
  11. 1 tbspcoffee powder
  12. 1 cupwalnuts
  13. 1/2 cupchoco chips

    Dry roast the walnuts. Let it cool and chopped it roughly.

    In a large bowl, beat eggs with sugar until frothy. Add oil and vanilla essence and beat until everything is incorporated.

    In an another bowl, mix flour, salt baking powder baking soda, cocoa powder, coffee powder. Add the flour mixture with the egg mixture mix it well. Now add buttermilk.mix well.

    Add roasted chopped walnuts and choco chips. Mix well.

    Pour the batter into paper lined muffin cups.

    Pre heat oven 180 degree Celsius and bake for 15 minutes or until a toothpick comes out clean when poking the cake.

    Remove from oven in the pan for 10 minutes before removing and letting cool on a cooling rack.
