Ingredients

20 minutes
4 muffins
  • 150 gall purpose flour
  • 50 gmelted butter
  • 1 teaspoonbaking powder
  • 1/2 teaspoonbaking soda
  • 1/2 teaspoonsalt
  • 6 teaspoonsugar
  • 1 teaspoonvanilla extract
  • 300 mlbuttermilk
  • 5eggs
  • 100 gmozarella

Steps

20 minutes
  1. 1

    Put all ingredients and 1 egg (excluding mozarella) in your blender and blend until smooth

  2. 2

    Using a greased 6 hole muffin tin, fill 4 holes halfway

  3. 3

    Crack 1 egg in the centre of each filled muffin hole

  4. 4

    Using your finger, create a well around the egg so it stays centered in the batter

  5. 5

    Sprinkle mozarella on top and bake in a pre-heated oven at 175c for 20 minutes

  6. 6

    After 20 minutes, take the muffin tin out and leave to cool for 5 minutes before serving
