Mendha singha/ Wheat flour biscuits

I learnt this recipe from my mother-in-law. This is a South odisha dish. In odisha Mendha means "sheep" and singha means "horn of the sheep". Ingredients

10 to 15 servin
  1. 2 cupwheat flour
  2. 1/2 cupsooji
  3. as per taste Salt
  4. 1 cuppowdered sugar
  5. 1 tspfennel seeds
  6. 1 tspcardamom powder
  7. 2 tbsphot oil
  8. as required Water
  9. as required Oil for deep frying

Cooking Instructions

    Take a large mixing bowl and add 2cups of wheat flour, 1/2 cup of sooji, 1tsp Fennel seeds, 1tsp cardamom powder and 1cup powder sugar and mix it well.

    Add 2tbsp hot refined oil or ghee to the bowl an knead it.

    Add some water as required and make a dough. Make sure the dough should not be so hard and so soft.

    Now heat a kadhai and add some oil for deep frying.

    Make the balls of the dough. The balls should be equal in size. Make it a roti or chapati size of balls.

    Now take one of the ball and roll it. Make a thick puri of the ball.

    Now, take a deep frying spatula and place the thick puri on the spatula. So that the design of the spatula will stick in the puri. Now,brush some water on the corner of puri and twist outwards and press the edge gently. Now continue this step with every balls.

    Now deep fry the biscuits until golden brown each side and remove it in a kitchen towel.

    After it comes to it's room temperature enjoy the biscuits.
