Mirin steamed juicy cabbage with chicken drumlets

Took inspiration from some of the recipes that I found on this website! Instead of sake, I used Chinese cooking wine and mirin. Minimal dashi stock is used. This is such a flavourful dish with amazingly soft cabbage :) I added the cabbage in 2 different stages to enjoy its different textures. A true comfort food.
Mirin steamed juicy cabbage with chicken drumlets

Cooking Instructions

Cut slits into chicken drumlets for faster cooking. Mix in all seasoning ingredients.

Add 3/4 amounts of cabbage into a deep heavy pot. Then pile on chicken (with seasoning), ginger slices and mushrooms.

Bring to a boil. Then lower heat to a simmer and cook for 20 mins. Add in remaining cabbage and stew for another 10-15 mins! We serve this with spinach namul and white rice.
