I got this recipe from Taste of Home Magazine years ago and I love it. Everytime I make pancakes, I always use this recipe.

I always go back to this Mexican Pancake Mix. I’ve tried different recipes from scratch and this is still my favorite, and the kids and husband love it too. I encourage you to try it if you are a fan of good pancakes.

The sugar in the honey browns quickly so that the drawing comes out clearly. These sweet fluffy pancakes are great plain. Make a lot and freeze to store them. Reheat in the microwave for a fresh-baked taste.It's better to draw the whole picture without stopping. My young boys don't like protien foods other than yogurt. I created these pancakes to give them an extra protien boost. They both love them.

This is not like regular pancakes. It is a souffle like pancake done in the oven. It is so easy to make. I use different toppings for this. My favorite is homemade apple butter.
