My favourite pancake recipe

The first food I've ever made myself was either fried eggs or pancakes. And from then on, I've tried TONS of different pancake recipes. Recently, I came across this amazing recipe from Chefsteps, so full credit to their team pancake! (Go Nick!) https://www.chefsteps.com/activities/light-fluffy-pancakes
BEST RECIPE EVER. I always end up feeling gross after eating a lot of pancakes but these are extremely light, with a bit of a bite to the exterior. LOVE IT.
Decided to post it here because they use grams and I convert on the spot every single time, so might as well do it once and save it.

Ingredients

  1. 4/5 cupflour
  2. 1 1/2 tspbaking powder
  3. 1/4 tspsalt
  4. 1/2 tbspsugar
  5. 1egg
  6. 1/2 cupmilk
  7. 2 tbspbutter (melted)

    Sift all dry ingredients together in a large bowl

    Whisk eggs and milk

  3. 3

    Add dry mix gradually, but don't overmix! Just enough to hydrate all ingredients

  4. 4

    Add melted butter and stir to incorporate

  5. 5

    On a dry nonstick pan on medium heat, spoon on batter in a circle and end on centre to form a mound. Don't move it!

  6. 6

    Once air bubbles begin to form, check the bottom for colour. If it's a nice even tan, flip it over! Usually it takes 3 minutes first side, and 2 on the second

    Top it off! Okay, here's my contribution:
    Sweet: I like to serve them with a coconut milk syrup (leftover from prev recipe). 1 tbsp condensed milk mixed with 1 tbsp coconut milk makes a creamy and refreshing sauce!
    Savoury: My friends don't understand this, but these pancakes are neutral enough to be made savoury. Sprinkle on shredded cheddar when warm, and drizzle with ketchup and mustard. Seriously, try it.
    Or if you're classically canadian, drizzle on that maple syrup!
