Achar means pickle. As the name suggests this parathas are made using spicy mango pickle. Achari palak paneer paratha is a delicious recipe which can be served as a breakfast or as a meal. Use of spicy pickle makes it different from our regular parathas. Paneer filling makes it even more delicious. It really taste good served with yoghurt and pickled green chillies.

Ingredients

  1. 2 cupswheat flour
  2. 1 cupspinach puree
  3. 2 tspginger paste
  4. 2 tspgreen chilli paste
  5. 2 tsproasted cumin powder
  6. 1 tbspoil
  7. Salt to taste
  8. Filling -
  9. 200 gramcottage cheese
  10. 1 cupspring onion finely chopped
  11. 1/4coriander leaves finely chopped
  12. 1/2 tspcarom seeds
  13. 1.5 tspred chilli powder
  14. 1.5 tspgaram masala
  15. 1/2 tspdry mango powder
  16. Salt to taste
  17. 1/2 cupspicy mango pickle
  18. Oil or ghee to roast

Cooking Instructions

    Boil spinach leaves and make puree. Now add wheat flour, salt, oil, ginger paste, green chilli paste, cumin powder and spinach puree to a bowl and mix everything well. Add enough water to make a semi soft dough. Knead it for some time, cover and keep it for 15 minutes.

    Mix grated paneer, spring onion, coriander leaves, carom seeds, red chilli powder, garam masala, dry mango powder and salt to a bowl and mix everything well.

    Remove hard part, if any, from the mango pieces and grind the pickle.

    Divide the dough into 8 equal portions. Now take one portion and roll it out in a 3 - 4 inch circle using dry flour. Now apply some pickle on top and put some filling in the centre. Now cover it and roll it using dry flour to make a paratha.

    Heat the pan on medium heat and roast paratha until light pink on both sides. Now add some oil or ghee to roast it until pink on both sides.

    Take it out on a wire rack. Prepare all the parathas in the same way.

    Achari palak paneer paratha taste delicious served with plain yoghurt and pickled green chillies. It can be served as a breakfast or a meal.
