Add spinach leaves, ginger, garlic and green chillies to a mixer jar and grind it to a smooth paste. Take flour in a bowl and add spinach paste to it along with roasted cumin powder, salt and oil. Mix everything well and make a soft dough using water as required. Cover and leave it for 15 minutes.

Grate paneer and add onion, coriander leaves, carrom seeds, chilli powder, garam masala, chat masala and salt to it and mix it well. Divided it into 8 equal portions.

Divide the dough into 8 equal portions. Take one portion of the dough and dust it with dry flour. Roll it into a 3 inch circle and put a portion of filling in the centre. Now lift the edges of the circle and cover the filling completely. Roll it into a medium thick paratha.

Heat a pan on medium heat and put paratha on it. When it is light pink from the bottom, flip it over. When it is golden brown add some oil and roast it from both sides properly. Put it on a wire rack. Repeat this process to make the rest of the parathas.

Serve Palak paneer paratha with curd and pickle. It is a great recipe to be carried in the lunch box.
